Hacienda La Papaya

Hacienda La Papaya is a historically significant estate owned by Juan Peña. It is located in Saraguro, Loja, known for its excellent land conditions. The coffee plantation is situated at an elevation ranging from 1900 to 2350 meters. By combining data monitoring and meticulous post-processing techniques, Hacienda La Papaya produces high-quality specialty coffee.

Hacienda La Papaya

From a rose garden, Hacienda La Papaya evolved into a coffee plantation...

The buildings within Hacienda La Papaya hold a long-standing history. It was once a land dedicated to cultivating a rose garden, but it was closed down following a devastating fire. However, the current owner, Juan Peña, purchased the land and with his background in plant science engineering and meticulous personality, Hacienda La Papaya began its journey into coffee cultivation.

Hacienda La Papaya

Due to diabetes, he learned about health management and applied it to coffee cultivation...
Juan Peña, who has diabetes, has developed a habit of wearing data monitoring devices to keep track of his own health condition. Utilizing this data analysis approach, Juan applied it to the concept of coffee cultivation. He collaborated with the University of Cuenca to develop a series of data engineering techniques to monitor the health and nutrient status of coffee farming. Through the development of software, the main interface allows for real-time monitoring of soil nutrients, pH levels, and other factors to assess the coffee's health. The implementation of drip irrigation systems ensures the immediate delivery of nutrients and water, meeting the coffee plants' immediate needs. Additionally, disease management is carried out by regularly inviting plant doctors to monitor different planting areas on a monthly basis. This proactive approach helps identify potential diseases in the plants. If any issues are detected, immediate disease control measures are implemented, including the removal of affected plants within a certain area to prevent the spread of diseases. Therefore, Hacienda La Papaya excels in disease management and maintains a high level of control in the field.

Hacienda La Papaya

In addition to data control in the cultivation phase, Hacienda La Papaya also strives to implement data control in the post-processing phase as much as possible.
We install temperature and humidity sensors on the drying beds and conduct mini-experiments beforehand. In the drying area, there is a mini drying room where we perform small-scale drying to assess the bean performance. Once we establish a fixed parameter that yields satisfactory results, we strive to replicate those parameters for larger batches. Therefore, in the spacious drying area, we regularly adjust the angle of the windows to ensure proper airflow and control temperature and humidity levels according to the set drying data, aiming to maintain flavor consistency.
